Best Coconut Rice Recipe | South Indian Style

This light and mild rice dish takes inspiration from the traditional south Indian dish thengai sadam which is commonly served during festival season.

In our household they say this is the best coconut rice recipe that they have experienced and we would have to agree. Many indian coconut rice recipe have different flavors, however this one focuses on the south indian coconut rice recipe ingredients.

Ingredients/ Shopping List

  • 1 cup of basmati rice
    Water to cook the rice
    2tbsp coconut oil
    1 tsp mustard seeds
    1 tbsp split and husked black gram (urud dal)
    1 tbsp Bengal gram (chana dal)
    12 cashews, well chopped
    2 dry red chilies
    1 green chilii
    a pinch of asafoetida
    12 curry leaves
    2 cups lightly packed grated coconut
    salt to season



Soak the rice in water for 30 minutes. Also soak the urud dal and chana dal in hot water for 30 minutes. Drain well, and set aside till needed.
Grate half a coconut to obtain about 2 cups of loosely grated coconut. Keep aside.

Step 2
Once the rice is drained, cook the rice according to packet instructions, ensuring plenty of salt is added to the water. Once rice is cooked, fluff with a fork and turn out onto a tray to cool the rice completely. For the best coconut rice recipe we recommend to cool the rice completely.

Step 3
Heat the oil in the pan, add the mustard seeds and let them heat up –you’ll know they’re ready once they start to crackle in the pan. Add the drained dals to the oil and sauté for about 1-2 minutes.

Step 4

Mix in the chopped cashews and stir until they are golden along with the dals.

Step 5
Add the dried chili, fresh chili and curry leaves until there is a change in colour in the dried chili. Add the asafoetida and grated coconut; make sure to mix well so all is combined. Lower the heat to a medium low and sauté the coconut till a slight creamish colour or a very light brown colour. Be careful not to over colour the coconut as this will leave a bitter taste. Taste and season accordingly.

Step 6
Lastly add the rice and mix on a gentle heat to warm up the rice lightly.
